Macarons Part 1: Tokyo Days

I am happy that the macaron trend has crested. Not because I’m a contrarian, which I am, but because all the bakeries that had no business making macarons have finally stopped, leaving only those with talent to keep me supplied. (Also, I am speaking of macarons, the French cookies; not macaroons, the coconut cookies. I point that out not to be pedantic, which I can be, but to make sure we are drooling over the same cookie.
